BAKED CHICKEN L'ORANGE

  • 4 skinless, boneless chicken breast halves
  • 2 tsp. McCormack chicken seasoning
  • 1 pkg. chicken gravy mix

  • 1 cup orange juice

  • 2 tblsp. brown sugar

  • ½ tsp. Worchestershire sauce

  • 1 ½ tsp. crabcake seasoning, such as Old Bay

  • ½ tsp. onion powder

  • ¼ tsp. coarse-ground garlic

  • 1 lb. fresh mushroom caps

This hen's not particularly pleased at the ingredient list...

Sprinkle about 1 teaspoonful of the McCormack chicken seasoning on the chicken breasts and let stand for at least a half an hour.

While it is standing, mix the remaining ingredients, except for the mushrooms and heat over a medium flame, stirring constantly, until it has thickened. Stir in the mushrooms and let the sauce stand for 5 minutes.

Pour the sauce over the chicken pieces and roast at 325 degrees for 30-45 minutes.

If you really want this simple dish to look spectacular, save out a handful of the mushroom caps and soak them in brandy. At serving time, ignite the mixture and pour over the chicken on the serving plates.
